Fajitas off the minimax

Cooked this on Thursday, but just getting around to posting it now. 
Got the minimal out and started preheating the cast iron pan.
In went in the onions:


Then went in the peppers. 



Then the meat:


And put it all together:


So simple, so quick, and so good.

    I do prefer raw, but these were lightly cooked. So yea.... I did.

    Very nice. That’s how I use my MM 90% of the time. I just use my wok the way you used your skillet.

    Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
