I just soaked and smoked 2 Whole Paycheck corned beef to turn them into pastrami. What you have there starts off 100 better. Do it!!It's a 302 thing . . .

I'll be interested in how this comes out. I've always used brisket for corned beef (or pastrami) and yours is a round cut of beef.
