Moon Shadows Brunswick Stew

1 pint pulled pork
1 pint pulled chicken
1 pint pulled beef brisket (optional)
2 14 oz. cans diced tomatoes
1 32 oz. box chicken broth
2 cups ketchup
1/4 cup spicy brown mustard
1/4 cup balsamic vinegar
2 large onions diced
3 medium potatos peeled and diced
1 package frozen lima beans
1 package frozen corn
4 tablespoons Moon Shadows Rub
4 bay leaves
4 fresh sage leaves
4 tablespoons olive oil[p]In a large stock pot, saute' the onions until soft. Add remaining ingredients except for the sage and bay leaves. If you need a little extra liquid add water. Simmer for 90 minutes. Set the bay leaves and sage on top of the stew and simmer for another half hour. Remove the leaves, stir, and serve. I've had a lot of Brunswick Stew in my time, but I threw this together last night and we all agreed, it's the best we've ever had. It's a nice way to enjoy your leftovers.
