Sunday Pad Thai

I love pad Thai and have been trying all the commercial pad Thai sauces as I haven't been able to get it right myself. Tonight was Thai Kitchen brand which was ok, but not my favorite.  Top two are Williams-Sonoma and Trader Joe's so far.  Didn't get a lot of pics since it goes fast, but had chicken, green onions, bean sprouts, and scrambled eggs in there in addition to the cilantro, peanut, and lime garnishes.  Great quick cook, I love using the wok.

    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    We love pad thai. Yours looks great.  We make our own sauce.   Give it a try. My recipe below is a work in progress.  I have not nailed it yet. 

    Beef Pad Thai
    This recipe will feed 8.  For the cooking portion, I usually take this recipe and cook it in four separate “sessions” as it works better on my small griddle.  The entire cooking process is fast (about 4-5 minutes).  Have all ingredients prepped and ready before turning on the heat. 
     
    Pad Thai Ingredients:
    Pad Thai sauce (see recipe below)
    1.5 lbs shaved beef
    2 boxes wide rice noodles (14oz boxes)
    6 Garlic Cloves minced
    8 eggs (beatened)
    2 cups bean sprouts (fresh is preferred)
    6 green onions chopped
    1 cup roasted peanuts (halved or crushed)
     
    Sauce:
    2/3 cup honey (or brown sugar)
    ½ cup fish sauce (Desi Fish Paste)
    ½ cup tamarind concentrate (Deep Tamarind-Date Chutney)
    4 Tablespoons Soy Sauce (Braggs Liquid Aminos)
    Juice from two limes
    3 Tablespoons crushed red pepper flakes
    3 Tablespoons Sriracha hot chili sauce

    Cook noodles according to package & rinse
    Mix sauce ingredients together
    Heat Wok/Skillet/Griddle to Medium-High
    Add oil to cooking surface and cook the meat and garlic together.  Push it to the side once cooked.
    Oil the surface again and cook the beaten eggs on the surface
    Once eggs are still a touch runny – Add Noodles, bean sprouts, sauce, and some of the peanuts
    Toss to combine all ingredients
    Once all ingredients are mixed and heated thru – remove from heat and place on plates or in bowls.
    Top with green onions & more peanuts and add a lime wedge.

    Looks great. Every time I see a wok cook, I say to myself "Self, you need to get out your wok and do some wokking". And then I don't....

    So. Ann brought home a large pork loin yesterday. And while I was portioning it out. I took a couple pounds for some Thai jerky.
    1/2 cup soy sauce
    3 tbs sriracha sauce
    3 tsp black pepper
    2 tsp onion powder
    2 tsp garlic powder
    1 tsp ginger powder.
    2 tbs brown sugar
    2 tbs worsy sauce
    2 tsp roasted sesame oil.
    1 tsp red pepper flakes. I ground this up slightly.
    Smidge over 1/4 tsp cure #1. This is a 2 pound batch
    Mixed all this together.
    Added the thin sliced pork.
    And into the dehydrator for 6.5 hours.
