The wife got a craving for Pad Thai this morning after we have been working to drop some pounds successfully since 1/1, and it turned out great!

Sorry guys - didn't get back to the computer until now. Anyhow, this recipe is truly just something I went with that's somewhat of a hybrid across 3-5 I found on the Internet.Also, @RedSkip, yessir I'm in/from Pittsburgh (little North in the burbs now technically).
@Davec433@smbishop and everyone, here goes:
1 box of Pad Thai Noodles
1.5 lbs of meat (usually all Shrimp but pictured is Shrimp and Chicken)
2 shallots sliced up
3 eggs scrambled
1 carrot grated
1/2 cup or so of smashed up peanuts
Cilantro/Scallion/Lime to your liking garnish wise
The sauce (you can get here a bunch of different ways depending what Tamarind product you have access to), I go with:
3:1 tbsp water:concentrate, couple tbsp Brown Sugar, 4tbsp Fish Sauce (could possibly sub a broth of choice if you aren't a Fish Sauce person), and Sriracha to your heat level (we are probably about 1-1.5 tbsp I'd guesstimate).
Wok how you prefer, but I usually do my proteins, then my veggies, then my noodles, sauce, mix everything back in to warm it all through and done.
