Found this on sale today.
Very floppy but very little fat marbling.
Cut 1/4 of flat off for smash burgers tonight. Food savored the rest and put back in fridge for next weekend.
Added Panko, Worcestershire and seasoning to mix.
slicing the raw flat was almost like cutting flank steak. But seemed tender. Strange

    I go out of my way to avoid grass-fed beef. I grew up on a farm, we always put up the steer to feed it a good corn, sweet feed diet for a reason, it yielded better flavor. It also gave the beef a much better fat marble.
    I think you made a good choice when you ground up the brisket,  I'm sure it will make excellent burgers.

    Not bad. Definitely had more of a wild flavor. Would have almost guessed it was venison blend.
    Would also do a double course grind next time instead of single.
    I probably should grind the rest as well but I really want to see how it cooks up brisket style.
    And my smash needs work. Also had trouble getting little Blackstone hot.

    Well, I guess it’s time.
    The bulk of this has been wet aging in my meat drawer for almost a month.
    Broke it out today and it still smells just as fresh as day 1. 
    Rubbed with some Black Ops and it’s on with some post oak.
    probably finish in the Dutch Oven roast style so we can eat for dinner tonight.

    Hey buddy.
    A couple weeks ago I picked up the single plus model.
    I like that one single probe reads food and ambient temp. But the probe is fairly large in diameter compared to other probes. And you have to push it in fairly far to protect the sensitive area of the probe.
    I like that the wooden storage box works as the signal booster as well as charging and storing the probe.
    I think they claim 165 feet of maximum  distance. In my old wood house the distance from my Egg to my couch in living room is about 75 feet. Reception drops in and out.
    in order to get this to be truly workable, you almost need to go through the cloud application. In order to do this you NEED a dedicated device to pick up the Bluetooth signal and broadcast to your home WiFi. I believe the larger base that hosts 4 probes will go directly to your WiFi but it will not reach 165ft with Bluetooth. I bought this more as a travel tool so I went with the the single.
    Is it everything I would like, no.
    Would I buy it again at close to list price??? After a few drinks, probably.
    For me it’s just on the positive side of being worth the money.
    For those using a rotisserie...this is a no brainer. Buy it!
