Strips & Celebration Cakes

Prime Strips
Medium Rare
Seasoning▶ Four 41 South Fat Henry's Classic Rub
Fuel▶ Rockwood and Pecan Wood

Potato Inspirations Potatoes (Celebration Blend, Baby) around 15 or so will yield 4 nice size patties.
▶Potatoes Blanched, smashed and then refrigerated to get firm.
▶Add in "ABOUT" 1C Buttermilk and 3/4C Bread Flour (it was just nearby but, AP would be fine).  Now get in there and mix the buttermilk, flour and potatoes up together and gently form your patties. Once patties are formed put them on parchment and spray oil on either side so they don't stick. Place the patties back in the refrigerator to firm up again.
▶12" or larger skillet
▶Avocado Oil and (as Gordon Ramsay would say) a knob of butter. But, not just any butter Kerrygold Butter. Also add about 6 stripped sprigs of thyme. And top each of the patties with a few sprigs of thyme. 
▶I did 2 at a time so I was able to move them around a little easier to get them in hotter or colder spots of the pan. Medium-high heat works best and you will notice the sprigs of thyme will pop almost like popcorn. Flip them once you begin to get some good color. I did not add anything to these when I plated. No EXTRA seasoning is necessary with these potatoes and using the Kerrygold plus the thyme.

    @loco_engr The bag I bought at Publix was pretty even with golden, rose, dark purple and red.  I was pleasantly surprised they all retained their color even after getting hit pretty hard with heat.

    @ausbro8 tell the truth I started out with these just going to be smashed Skillet style. I saw Martha Stewart doing some smashed fried spuds on her show with Snoop.  I've made potato cakes before out of mashed potatoes. But these were on a whole nother level. The texture on these after all the steps was almost like a delicate gnocchi.  The key is not to overwork it when mixing and forming the patties.

    Now that is surfacing in great style.  Great cook across the board.  Nailed the steaks and those potato cakes look incredible.  Thanks for sharing.
