SRF Flank Steak - Black Grade Wagyu

I took advantage of SRF's recent pick 6 and get 35% off sale and got this flank steak (Black grade wagyu). It was two pounds. Seasoned it with Oakridge BBQ's Carne Crosta and fired up the small BGE to 500 degrees. 



Grilled it direct a few minutes each side over Rockwood and a small chunk of mesquite until it hit 130 internal. One side was slightly thicker, hence the med-rare and medium finish. 



Steak was extremely tender and had that rich beefy flavor. Very delicious. Sliced against the grain and served with broccoli and Kraft mac n cheese. And yes, nothing says exceptional like a $50 steak paired with $2 mac n cheese out of a box.... but my 4 year old daughter loved it!
