Porchetta?

Long time ago I had Porchetta sandy at killer restaurant downtown. I recall it being like thin sliced, crispy pork skin sandwich. The other day I had a Porchetta sandy at restaurant down in NH and it was AMAZING. This one was more like shredded pork butt spiced with plenty of garlic and what tasted like Lysanders pork rub, topped with super sharp provolone on a crusty baguette roll. Wicked good. Anybody have good recipes for Porchetta on the egg? - Especially the latter pork butt style.

was a place just south of the boarder in andover ma that was making porcheta sandwiches. it was rolled pork loin wrapped in belly fat skin side out to crisp up. the pork loin was cut fairly thin before rolling and the texture was very soft for a loin. what was the place in nh

We have a food truck in the Tampa Bay Area called “Vanchetta” that I highly recommend. It’s outstanding. Find their location thru their IG page.=======================================
