Chicken Ramen

 I’ve had a hankering for some ramen the few months and none is availing around here so here we go. 

 You may remember I experimented with some soy and mirin chicken a month or so ago.  With the advice of @The Centex-Smoker I added some ginger and rice wine to my first try of mirin,dark soy, light soy and garlic. Marinated 4 boneless skin on thighs for 3 hrs.  
  While that was goin on I started the broth that consisted of chicken broth,green onions, ginger, garlic,mirin, soy and red pepper flakes.  Let all that simmer for about 1hr then it just sat on the stove till eatin time when I strained and reheated. 


Boiled a couple of eggs to make Tamago  and then soaked in a mirin, dark and regular soy mix 


Chicken went on the egg up in the air at 425 and was glazed with dark soy and brown sugar 


Served up with steamed spinach, baby ports,radishes and of course ramen noodles topped off with scallions
and sesame seeds 


Really fun and quite edible bowl of goodness.  Thanks for looking.
