Rubbed and beginning to sweat on the counter....

Put on the egg at 1 o'clock at ~250 degrees let them roll for 2 hours. Pulled them out to wrap in foil and this is what I got...

Foiled and face down back on the egg for another 2 hours.
After being pulled out of the foil back on for about an hour to crips back up led me to these beauties...

They were hands down the best ribs I’ve ever made and I couldn’t be happier. The whole goal was a practice run for the Super Bowl, I think I got it down now.

Ribs RULE!!!!
I love doing ribs, and when the bogo sale is on I fill up all the extra space in my cart with them.
