Dry aged ham and prime rib

A holiday feast! We got this ham that had been cold smoked and dry aged for 210 days and smoked it today along with a prime rib in the XL. Best Christmas dinner ever. 

















I'm in Fredericksburg, VA, and I have an XL and a medium.

Left it the fridge for 2 days to age a bit, then covered in herb butter and let rest another day.
