First time turkey

Throwing a turkey on the large this afternoon. Never done it before, but from aggregating all I’ve read and watched seems like I’m aiming for 325 for about 3 hours for the 12lb bird. Going to rub it down, and chill the breasts with ice for 30 min, put it on around 2:30 aim to eat around 7.

    The temperature is the story.  As above, reads like you nailed it.  Congrats.  
    If you really want to get the mahogany color, toss some cherry chunks (or chips) in with the cook.  Really darkens the skin.  FWIW-
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    I'll second this!  Only one handful of chips/chunks with turkey is needed though.
