Brisket for a 3 year old. Sauce Question

my Daughter’s birthday party is today. She has many friends coming to the house. Because I am a good father, I started smoking a brisket at about 11am yesterday. I have attached pictures of the adventure. 

I also have a lot of beer for them. The beer is from Tree House brewery in Sturbridge Mass. Simply outstanding. 

In the unlikely event that the children don’t like brisket and beer. I have invited their parents and a pony. 

Sauce Question. Anybody have a “go to” ingredient for sauce?  I’ve been adding celery salt which adds a nice taste. Wondering if anybody has another go to ingredient 

brisket question. Going with Travis method fat side down. I’m about 21 hours in (very low temp). I’m at 185 IT. Should I remove from pan and finish on the grid?

    A few questions. You are feeding brisket and beer to 3 year olds? You want sauce? 

    Any chance you are in tge sauce? Oh....I read earlier the liquid smoke is good.

    No help with the sauce as I don't use it and any I offer is store bought.
    Dogs and ketchup seem to go well with kids; side of mustard for the adults.  B)
    No experience with the Travis method either so can't comment on finishing on the grid although  direct exposure to the smoke environment sounds like a benefit to me.  FWIW-
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Just wait for the feel in the thick part of the flat and you are there.  Lookin good.  BTW- no LEO now but could be a flight plan filed for later this evening  B)

    Probably too late, but my go-to ingredient in the sauce is brisket drippings, after the fat has been skimmed, of course. Absolutely outstanding. And if you’re feeling like an overachiever, throw in a blended/grated apple and put the sauce on the egg for an hour or 2 to catch some smoke. You won’t be disappointed.
