Temps finally fell below 80 so it’s fall. Decided to smoke some hens for a gumbo while watching my tigers.

That's a beautiful post looks delicious. I like the dark roux. It usually takes me about two beers to get that color.

That’s some good looking gumbo - I was just reading a serious eats article about gumbo the other day. Do you use filé powder, okra, or both to thicken the gumbo (and roux, of course)DFW - 1 LGBE & Happy to Adopt More...

Just file powder. My kids aren’t big on okra.
