Temps finally fell below 80 so it’s fall.   Decided to smoke some hens for a gumbo while watching my tigers.

That's a beautiful post looks delicious. I like the dark roux. It usually takes me about two beers to get that color.

That’s some good looking gumbo - I was just reading a serious eats article about gumbo the other day. Do you use filé powder, okra, or both to thicken the gumbo (and roux, of course)

Just file powder.  My kids aren’t big on okra.  I like my okra just smothered with shrimp and tomatoes.

@NorthPilot06 I'm no expert but what I remember is one or the other but not both.

Your Tigers are looking pretty stout this year! And CBS decides to can the prime time 7 pm slot for Bama/LSU this year of all years! I work during the day on Saturdays ugh
I would crush the gumbo btw...
