Meatloaf and Fondant Potatoes

Cut 3 potatoes into 2” long cylinders. Seared both ends in cast iron with some butter and thyme sprigs. Once seared I added some chicken stock and moved to the small running 400 indirect to roast until soft.

While all that was going the large was handling the turkey meatloaf

And plated

The meatloaf oaf was great and the potatoes were crispy crunchy on the outside an pillowy soft on the inside. Incredible combination of textures and taste but I honestly don’t think it was worth the effort. Never know till you try.

@Mattman3969 I could see where the potatoes could be a lot of work making them into cylinders. They must have been huge to start with. I think I'll try it by just cutting the potato ends off enough so they'll stand up. Nice looking cook and thanks for posting.

I actually cut the ends then cut into the 2” length then skinned and shaped. The time spent searing and keeping an eye on the entire cook vs oiling, salting and cookin a baked potato just didn’t seem to justify when I get crazy crunchy skin and pillowy insides.
