a fatty question - what then!!!

I'll admit I have not poured over the fatty topic but now am intrigued and plan to do some soon. My question though that I don't recall being addressed is what are they for? Snacking on cold like you do with summer sausage and cheese and crackers or do you make sandwiches and eat them hot?

My fault, thought it would not work. Anywho, here is the jist of it.[p]I too thought "ehh... it's just sausage, I don't want to mess with potential grease fires and such."
I was wrong and should have drank the fattie koolaid much earlier.
No grease... that is the best part. Don't know where it goes, but it's the greaseless sausage I have eaten... is that a word?? Easy cook, another best part. Cheap, another best part!!![p]All I did was take jimmy deam sausage log with sage. Rolled it in Moon Shadows rub. This is Ken Stone's new creation, great because it's low in salt and sugar... but high on flavor!!
Indirect at 250* for 3-4 hours till a 170* internal. Apple smoke. FANTASTIC. Wish I would have made more as gifts for the neighbors.
I put it on biscuts, crackers, an omlette and in gravy. Multiple uses. Too easy, cheap and GOOD to not try.

RRP,[p]The thing I like about fatties is that the Egg seems to cook out most of the fat. The results, even with really cheap sausage rolls that are mostly fat, come out not greasy and rather meaty. [p]Mostly I serve slices with hash browns, but I also use slices as lunch meat in sandwiches, or as appetizers if I put a lot of rub on them. They are far too attractive as a snack.[p]gdenby
