Visited Lockhart yesterday, the center of the Texas BBQ universe. The whole town smells of roasting beef and wood smoke. We checked out the big three (Kruez', Smitty's, and Black's) and decided on Black's for lunch based on feedback from a couple locals we talked to. It was awesome. Bride of Teefus selected the smoked pork chops and I had the Beef Rib and a slice of Brisket. It was wonderful.

    Lockhart is between home and the ranch so we stop there quite a bit. We prefer Black's to the other two. Just down the road, Chisholm trail has a killer ham sandwich that they smoke. And if you go a little further down the road, City Market in Luling has killer BBQ as well.

    Lockhart is awesome. We would visit San Antonio often when we lived in Houston. There was always a stop in Lockhart or Luling along the way.

    It's a great town.  I've never eaten at Black's or Smitty's because I got to know some folks associated with Kreuz.  They used to just bring me food from there when they came to San Antonio.  I know the discerning palates on this forum are probably right when they say Black's is better at this point, but I've always enjoyed the food at Kreuz.  

    I've also always thought that it was a REALLY bold move to open a yet another BBQ restaurant in a town of 12,000 that already had 3 world class BBQ restaurants - and make it big enough to seat 300 people.  Clearly it paid off because there are lines out the door almost every weekend and sometimes at lunch on weekdays.  

    If you go there, know that the line moves quickly.  We used to take my son's soccer team there after games and they always got us fed efficiently and well.

    And now for my question for eggheads.  Kreuz just announced they are using only Hereford beef.  Is that really a good thing?  There used to be a couple of steak restaurants in San Antonio that used only Hereford and they never impressed us and they went out of business...

    Here's my opinion. No one can tell the difference between Hereford, Angus, or any other breed after 12 hours on smoke. Growing up we raised our own beef. We started with Hereford/Holstein cross breeds. Tasted awesome. We moved on to Charolais/Holstein cross breeds. Tasted awesome. We swapped some of our beef for pure Angus from a neighbor. It tasted awesome. Flavor wise, I think there is more to be said for grass fed beef finished on alfalfa, corn, and sweet feed than there is to be said for a particular breed. We selected the genetics of our steers for utility purposes (Holstein (tall frame) + Charolais (bulk and uniform fat) = big freaking steers that taste great.

    They took over concessions at our high school football stadium, the fans love it!

    @Teefus - I agree that differentiating the breed won't happen.  As you mention, the differentiator is the taste/texture of the outcome.  While being able to label the breed won't happen you will likely  notice a different tasting/eating experience across them especially the grass vs grain fed proteins.  At least that's my lame post on a Tuesday.  FWIW-  B)

    Never been, but I should. I effectively drive through Southlake to get home 360/121 - it might be dinner some night. 

    Also. I’ve only been to Blacks in Lockhart, but it was incredible.

    That makes total sense.

    What about a medium rare ribeye or filet.  How do Herefords stack up then?  I ask because that's what we ate at the local steak houses in the 1990s and to be frank, while they cost more, I didn't find them to be as good as what was served at Outback.  So after trying it a few times we quit going to the Hereford place.
