Red Curry Coconut Shrimp n Rice

Gettin the curry paste, green onion and lemongrass all happy. Then the shrimp went in
Then poured in the coconut milk and fish sauce
Then the Kaffir leaves and some fresh Thai basil
Put it in some green onion stems and dumped into the serving dish
And served ver with jasmine rice and a little cilantro garnish
Incredible taste. Thanks for looking.

2-5 tablespoons of red curry (get curry smelly)
4-6 green onion. Whites chopped. Green 1” or so
1 stalk lemongrass chopped. White only
3-4 cloves crushed garlic.
(Add to wok)
1lb of Big shrimp. Add now for 2-3 min. Stir hard and fast.
2/3 cup coconut milk and 2-3 tablespoons of fish sauce. Add now and get boiling.
2-3 kaffir lime leaves and handful of Thai basil.
Cook till shrimp are done.
Add green onion tops and remove from heat.
