Making a loaf, of meat

So, making some meat loaf tonight.  The wife and kids are out of town, and I am home, so decided to check out a few recipes and techniques and have at 'er.  Maybe a little over the top in some respects but still, I am having fun.  I will let you know how it turns out.

Was winging it, so this is not precise.  But I combined a pound each of ground turkey, medium ground beef, and ground pork.  Then in another bowl, about 4.5 ounces of panko, which is what I had left, with about half a cup of heavy cream, which is also what I had left.  About approximately two tablespoons of Worcestershire, and three beaten eggs, added to the panko mixture and left to sit and then eventually added and mixed into the meat.  Meanwhile, I was rendering out 4 slices of bacon cut into lardon. Once they were done I added the bacon to the meat mixture, and then sauteed about 3/4 of a huge vidalia onion and a couple of ribs of celery, pretty finely chopped, in the bacon fat with five small minced garlic cloves.  When that was soft I added it to the party.

Along the way, I seasoned with salt and pepper, obviously, as well as some homemade rub.  Full disclosure, I also added some MSG, I would say about 1/2 teaspoon.  

Then, I took a loaf pan, lined it with plastic wrap, and jammed all that stuff into it.  Miraculously, it all fit perfectly, packed tight.  I put that in the fridge to set up and got the Egg running.  Targeting about 300 with a LITTLE bit of hickory smoke. Then I turned it onto rack set into a pan; this little trick worked beautifully! Shook on some more rub and on it went:



I plan to glaze it with something (any suggestions?) in the last half hour or so, and will let you know how it turns out.
