Picked up a blackstone a few months ago, I don't know why I resisted so long as I now use it 3 times a week. Anyway, marinated some skirt steak and make come sweet corn tomalito:

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"

Quite a complement considering your last epic post, now this recipe I offer is in no way going to be comparable to said cook but I tell you it's a solid Taqueria style recipe, as usual I don't deviate from the recipe except to use skirt steak instead of flank. Enjoy:SciAggie said:

Thanks. Being a teacher, that means I steal good ideas from wherever I find them. Again, that is a nice cook you posted - none of us here are in a competition. It’s about having fun, cooking good food, and spending time with those we care about. Thanks for the second link.BGEChicago said:

Fine looking plate. And thanks for the tomalito recipe. It sounds like it would be a winner with my crowd as well.
