Bend Test

There is a lot of information out there on doing the bend test for ribs. I have only done baby back using the 2-2-1 method with a temp of 225-230 degrees.
When I have tried doing a bend test the want to break instead of bend.
Suggestions?

Go with the toothpick test for the win. Much easier to use and judge the finish-line before the cook runs long. (And works regardless of rack size).Generally if a full rack breaks, it is over-done. FWIW-Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

i think the bend test works better with ribs that never see foil. 2 hours in foil and babybacks will break everytime
