Do you ever have one of those evenings that the cook kind of has a mind of its own? I wanted to try making green lightning shrimp, but my wife is sensitive to spicy foods at the moment - so I’m thinking substitute green chilis for jalapeños. I have fresh peaches so I thought - peach salsa - that will go well with shrimp. I had green chilies out so I thought I might as well make green chili corn tortillas. What to go with it? Well, why not corn fritters with some green chilies? So that’s what I did...
So I made tortillas...
Then the fritters.
Then grilled the shrimp.
Y’all, this wasn’t shabby. Thanks for looking.

"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"

That's just not right! Meant in the most jealous way possible. Everything looks fabulous. What a cool tortilla press."The pig is an amazing animal. You feed a pig an apple and it makes bacon. Let's see Michael Phelps do that" - Jim Gaffigan
