Bacon onion bombs again

Wife and I revisited the onion bombs. Ground sirloin stuffed with mozzarella and season to taste. Outer 2 layers of white onion over the meat ball, wrap in bacon and sprayed with duck fat. Lawdy lawdy

Well, I married me a wife, she's been trouble all my life,
Run me out in the cold rain and snow -
Depends on how quick you want to eat. They're fairly forgiving. I ran direct on cast iron at around 300. I don't pay attention to time, but if i had to guess it was 60 to 90 mins. I was enjoying cocktails so the food was actually dessert.
