3” prime NY strip

My entry into the weekend steak cookoff...  Cut this hunk away from the whole strip I bought a few weeks ago at Costco.  As I did last time, did it TRex method - intense sear with the grid right down on the coals.  About a minute per side, each side twice. Rain was threatening so I took the lazy way out - let it finish in a 225 oven - took about an hour to get to 129.  Wife said it was the best steak ever!

    Personally, I do not give a crap what you call it - it looks like it was cooked absolutely perfect and I would love it if someone served that to me.

    I'm not sure my wife would have gotten any of that steak...
