Chili, pizza, 7layer dip, spatchcock chicken, & king ranch mac n cheese (pic heavy)

Over the top chili
Just added the shredded/crumbled meat ball before this pic.


Prior to this I made a pulled pork pizza for dinner with a Carolina BBQ sauce

That pizza was surprisingly good.  Can't wait to whip up another one!

Non-egg but SO good is 7 layer dip.  Cream cheese, refried beans (with 1packet of taco seasoning mixed in), guacamole, cheese, olives, tomatoes, lettuce (which I didn't picture)
.Mrs Wardo doesn't like olives so the compromise is evident here.
Final item was my first spatchcock chicken.  This was unbelievably good.  Raised grid (high in dome) for about 90min at 375ish. I used John Henry's city market rub.  I mixed that and butter under the skin and let it sit for 12+ hrs.  I used most of that chicken meat for king ranch mac n cheese. 


Lots of cooking and lots of fun.  Going to do a clean burn of the egg once my chili comes off.
