    Buy buy it in gallon containers, and keep in refrigerator. Transfer to squeeze bottles, which also reside in fridge!

    I try, and frequently fail, at keeping the minimum of sauces and condiments in our fridge. They just take up too much room.

    Vinegar based, and hot sauces seldom see the fridge unless they are on, or in, any of the food we cook.

    When I did a "spring cleaning" of our fridge last month, I cleared out a big pile of junk we never use. It had been stored, due to our children purchasing it because it is sooooo good, and using only once.

    Our fridge, that never had any room for anything, looks like a vacant warehouse. A clean vacant warehouse.

    I was amazed that we could put a watermelon, a rack of ribs to thaw, and a pork butt to brine in the space we now have.

    After opening we'll keep them in the fridge but will pull and get to room temp before using on meat.  More flavor when warm.

    My fridge would be about empty if we took out all the sauces and condiments.

    Now that I think about it, all of the BBQ restaurants I've eaten at in my entire life have always had the sauce on the table during business hours. If refrigeration was a problem there would be a lot of sick people around. 

    Turnover is higher though... these bottles are refilled nightly and probably stored in the fridge until opening.  There's a big difference between a restaurant and your house where condiments are sitting stagnant at room temp for months at a time.

    Opened BBQ sauce will usually keep well for 1 month when stored in the pantry. To extend the shelf life of opened barbecue sauce, refrigerate it. How long does opened BBQ sauce last in the refrigerator? BBQ sauce that has been continuously refrigerated will generally stay at best quality for about 6 to 9 months.

    i would never use a bbq sauce thats been sitting in the fridge for 6 to 9 months opened

    For me it's all about habits, especially with my wife.  I'd hate to even start the conversation about, "This sauce needs refrigeration, while this one does not."  Much easier for us to agree and establish the habit of once opened, they all go in the fridge.  The exception in our household would be that a bar or two of butter is okay, and actually preferred, out on the counter top at all times.
