Short rib tacos

i still struggle with chopping these beauties up and making tacos....but they’re so delicious, I get over it quickly. I smoked these over cherry and hickory and served topped with a Napa cabbage salad, and black bean/corn salad. I made grain free tortillas, and everyone chowed down!
I'm in Fredericksburg, VA, and I have an XL and a medium.

    Nice . Still haven’t tried beef ribs tho it is top on my list

    That looks incredible!!  We love to cook beef ribs here in Texas.  Making tacos out of them knocks it out of the park.  Thanks so much for the idea!

    All I’ve seen there are the chuck ribs cut into small pieces and they’re way too expensive. I go to a butcher in Maryland when I’m up there that sells them for $3.50 a pound. We have a good butcher downtown Fredericksburg that sells nice ones, but $10 a pound. No thanks. Have you seen full racks at Wegmans? My last trip to Maryland, I picked up 4 4 bone racks, so I’m good for a bit. 😉

    I just looked at your post. Those are the ones I’ve seen there and they cost too much! I’ve cooked them a few times and they are good but I like the big rack of full ribs. 
    I go to a place called the “sudlersville meat locker” in Sudlersvile, Md. it’s on the Eastern Shore

    It’s made with cassava flour and avocado oil. We’re doing the gluten/grain free thing for a while. They aren’t bad...a little sense of normalcy being able to eat a taco.
