Likely not a revelation for most of you, but a helpful video for those who may not know the difference and the corresponding impact on recipes.

(I recognize the voice in this video from that featured in my go-to Dutch baby recipe, which is killer - http://foodwishes.blogspot.ca/2014/10/dutch-babies-almost-as-easy-to-make-as.html?m=1)

Great info. I like Chef John, even though he always sounds like this:

Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -
I figure that’s his schtick.SmokeyPitt said:Great info. I like Chef John, even though he always sounds like this:https://www.youtube.com/watch?v=tqNhEzrWQpY -

This is all you'll find in my house besides specialty salts. I buy 9 lbs at a time from Amazon. Can't find it locally, only Morton

Chef John didn't always sound like he does now. This from 2007... bland.

As for Kosher salt sodium content...
Morton's, 480mg per 1/4 tsp
Diamond Crystal, 280mg per 1/4 tsp
Or, How to cut your sodium intake (almost) in half without even trying!
I hate it when I go to the kitchen for food and all I find are ingredients!

True, but I never do, not for salt anyway. Most recipes seem to specify salt in teaspoons or "to taste". Never saw one that specified weight. Unless baking and even then, I don't trust my scale for the really lite weights so I use measuring spoons. I do weigh the flour and water of course.buzd504 said:

Sure, anything savory is generally eyeballed for sure. I did pick up a jewelry scale for measuring small amounts of spices.Carolina Q said:

None of this makes any sense. You weigh water, but not salt? The Imperial measurement system is based on the weight of water. An ounce is an ounce, a pint is a pound. As for salt; it's a rock, sodium chloride, sodium. If you want less sodium, use less salt. Half of your 1/4 tsp of Diamond Crystal is air, ie. larger crystals, that why there's half the amount of sodium.Carolina Q said:
