Never had any more trouble peeling a fresh egg than any other. We like baking with duck eggs. Also where are you getting pasteurized eggs?

Here's where an Instant Pot comes in handy. 4 minutes pressure, 4 minutes release, ice water bath and they peel easily.

i found the same thing with the ones i had in the fridge for 6 months, difficult to peel without damaging the egg. i had just assumed it was the type of chicken he raised, very thick shells. it could just be those thin shelled store bought eggs peel better after they gas up a bit

@alaskanassasin, You can pasteurize eggs yourself with sous vide. As I recall, 135° for 75 minutes, then ice water bath. No plastic bag or vac sealer required. My memory is a little fuzzy so you might want to look it up to be sure. :)

Try steaming rather than boiling - works much better for peeling. Older eggs also peel better (maybe the pasteurized eggs are older than fresh from the farm or maybe the pasteurization processing may help breakdown the membrane).

No, we don't eat the shells. But can you definitely crack an egg into a pan, without ANY ooze touching the outside of the shell? Can you hold your breath long enough to walk thru a measles ward? Do they have measles wards? Is it breakfast time yet?
