Easter Feaster (best lamb I’ve ever had)
Costco Australian rack of lamb, Sous Vide at 130 for 2 hours then dropped in a nuclear hot bed of lump.
Finished with a fancy EVOO and a rose’ wine vinegar board sauce with mint, parsley, garlic, shallot, salt, pepper.
also made a “demi” out of the lamb bag juice, butter, red wine, rosemary, and a metric sh!t ton o butter.
We also double smoked an HEB ham and Janell made twice baked potatoes, veggie au gratin and homemade yeast rolls.
all five of us were happy, full, and now sleepy.

And dessert from the Asian market. It’s like a little modernist cuisine/mouthful of garbage (but fun). It’s all in powdered form and you make gummies (for the fish) and spheres for the roe.

That is simply outstanding.
I’ve got a rack on now. After a lot of clicking, I decided to coat with dijon and herbs for a reverse sear. Yours will put mine to shame, I fear. But I don’t plan to show the fam what you did and hope for the best!

Not to diminish anything about that fantastic looking lamb, but really think the star of the show is the strange sushi dessert.
