Beef Rib Day!
Got me three big bones that I had cut in half. Rubbed with a combination of BPS little Louie’s seasoned salt and killer hogs hot rubs.
Got the egg purring with som BGE lump and pecan chips at about 285. Gonna eat good this evening.......I hope anyway. Lol.

My local butcher just started to regularly carry beef ribs. Cant wait to give them a try soon.

Yes my local butcher does not have them. I was at a place yesterday that had them and I couldn’t resist. I’ve started carrying a cooler in my truck all the time now in case I run across meat I want to buy out of town. Just add some ice and I get it home no problem. Lol.

Lookin good. Brisket on a stick.
And a suggestion-for every BGE cook I rotate the dome thermo so that the target temp is at 12 o'clock. That way a causal glance let's me know the temperature trend. Just be sure to not mess with the calibration nut of the back of the thermo when rotating. FWIW-

Well they ended up being pretty good for me. My family thought they were outstanding. Of course, why not, it was free food for them. Lol.
I was shooting for around 203 and they got away from me a little bit and by the time I got them out they were sitting at 209. So too tender for me.
Im looking forward to cooking them again though. This was my first adventure with these big giant beef ribs.
