Just having a little fun with the title of this thread since this is likely not the most exciting post. I picked up a Kick Ash Can a little while back and so I thought this might be an excuse to share my pizza setup. I will be cooking a Brisket Pizza later this afternoon:

P.S. Thank you Smokeware for throwing in the complimentary charcoal gloves. Nice touch. 🙂

Also, the Smokeware Chimney Cap will be coming off for the cook this afternoon and I will be using a pizza screen.

    Ingredients:

    Brisket

    Walla Walla Sweet Onions 

    Oregon Elephant Garlic

    Baby Bella Mushrooms

    Cheese (Highlighted by Aged Tillamook Sharp White Cheddar)

    Alfredo Sauce

    Spinach

    RO Pizza Dough

    Cooked at 525 - 550 F for about 16 minutes (rotated 180 degrees once)

    Thank you. I really enjoyed the addition of the Tillamook Sharp White Cheddar to our cheese blend. It's the first time we've used it in our pizza recipe.

    Thank you. Table courtesy of @Tspud1 . I've been very pleased with the table. It is sturdy and has held up very well over the past four years, or so. To do it justice I need to get on the stick and give it a good spring polishing. 😊

    I have an @Tspud1 table also -I’ve had it almost a year and it is solid as a rock. You have a few custom features like the lock on the drawer and the pull out for the propane tank that are really cool. Great table !!

    Pizza's look good.

    Tried some myself over the weekend and had trouble getting the temp to raise up to the desired temp. Finally got it to about 450.

    How did you configure the openings on your Smokeware Cap and the lower vent % open including screen open or closed?

    Hello. First, just so we're comparing apples-to-apples, I have a kick-ash-basket and had the bottom stock grate removed during this cook. I have the screen closed from start to finish. While lighting I have the vent wide open on the bottom. The Smokeware Cap is off from start to finish, so no adjustment needed there. After lighting with my torch I then adjust the screen from 35-50 percent. I add the ceramic pizza stones right away. Some will let it heat up a bit before doing so. I typically allow a good 45 minutes for the Egg to come up to temp. I'll start peeking at it after twenty minutes or so. Once in a while I'll have to open it up a little more to bring it up to temp. particularly, if I have quite a bit of reused charcoal in there. I think the kick-ash-basket allows for a little more airflow.

    Minor correction:

    When I wrote:

    I should have written:

    After lighting with my torch I then adjust the VENT from 35-50 percent.

    I didn't mean to contradict myself in what I had written previously in my description. I do, indeed, leave the screen closed at all times. I just adjust the outer vent door.
