Old School Rick Bayless Chicken Adobado
This Adobo is excellent. Marinated chicken in the adobo a few hours then cooked at 400 raised indirect over small multi-colored taters tossed in adobo.

We had adobada at on of Albuquerque's most well known New Mexican restaurants a few years ago while driving from Houston to my sister's wedding in Idaho. Needless to say it was not a pleasant drive. Yours look amazing through.

Good work putting it on a grate.
SWMBO put a lamb leg (that I bought planning on doing kabob style until the shellfish incident knocked me out for a few dsys) directly in a baking pan with potatoes surrounding it. On top the bottom of the pan. Bad.
She asks me to check on it...open oven and yell WTF! She knows better. Honey, you gotta put it on a rack or the potatoes otherwise it will just cook from the bottom. I showed her the thermapen readings.
Anyway, flipped it over on to the potatoes and it eventually turned out to cook evenly, but quite the scare.

Potatoes cooked in schmaltz and chicken drippings are among the finer things in life. I love them.

I am picking up his Mexican Everyday book in the bookstore right now. They also had his More Mexican Everyday but it didn’t seem as good to me. I have a 20% off coupon and a bookstore membership discount so hopefully it will be about what Amazon charges.
