Short rib tacos.
I was kinda torn about shredding these beautiful ribs that I smoked all day but I really wanted tacos. I made some grain free tortillas and a Napa cabbage salad, and threw it all together. Topped with a little lime and cilantro....it worked out ok. 😉

Your ribs and tacos look awesome!
I smoked some a few weeks ago and had a couple left over. I cut the meat off of the two that were left over and diced it up. The next day I piled it on a baked potato. They were great the day I smoked them but even better the next day.

Thanks. Yeah, I was hesitant to “ruin” such a wonderful piece of meat but short ribs make great tacos, or pulled beef for anything

Your chuck ribs look stellar as does the tacos. I personally wouldn’t have had the willpower to turn into taco meat. Nice cook.

Thanks man. I know, it’s kinda sacreligious and I struggled too. My family is insane and doesn’t like a big beef rib in front of them so I was trying to be creative because I wanted to eat. Lol
