Country Ribs
Costco had Country Ribs (Shoulder) at a great price Friday and I couldn't resist. I cold smoked them naked in my Little Chief for an hour prior to applying the rub and moving the party to the egg. After 3 1/2 hours at 275* they went into a covered pan with Brown Sugar, some butter, and a 1/2 bottle of Sweet Baby Ray's sauce. After another hour they were up to about 205 internal and came out of the pan to set the glaze. Fork tender and delicious. Served with Scalloped Corn and Stewed Kale. Sorry, no plate shots.

Thanks all. These were so good I'm rethinking regular ribs. My bride and I have all but decided this is our new "go to" pork protein. In addition to Saturday dinner, I enjoyed these for Sunday breakfast, Sunday lunch, and will enjoy some for lunch again today. They're almost better reheated. No bones, easy prep, super tasty. What's not to like?

We love country style ribs. Our Kroger runs boston butts .99-1.29 occasionally. I'll pick up 1 or 2 and have them sliced about 1.5". I'll vac seal what we don't eat first time around. Usually much better price than the already sliced ccs ribs.
