Were they aged in the same chamber? Sorry for the interrogation, I've began a little charcuterie with the help of @Sea2Ski; just bacon and sausages so far. Where you have less than optimal humidity as you find in home refrigerators (typically less than 50%, you really want it more humid) what happens is the outside of the meat develops a shell that slows down moisture loss.So if you were to graph weight loss vs time with low humidity/no bag vs high humidity/bag, you would find the no-bag looses moisture relatively quickly and tapers off, vs more of an long-term moisture loss (which also tapers off, but not as rapidly).______________________________________________I love lamp..

That hard "shell" is your enemy when you're aging outside of the safe temp zone (!= 32-40F) - for example, bresaola.Really just running my post count up. Fun to make all this stuff up.
