    I had the same concerns when I was looking for a small fridge to serve double duty.
    This is a fairly high end, well insulated fridge. It's actually sold as a high end bar, prep fridge. It does have a nice circulating fan built in and it runs on and off several times a minute. It seems to be drying well and has really shrunk and darkened. This is my first so I started with a small strip loin as a test. As far as I can tell it looks like it should. Nothing like it does on day one in the photo above. There is no sour or off smell and the surface is dry with nice crust.
    I had to use great restraint as I stopped by Sam's Club on the way home last night and spotted a beautiful Prime Ribeye Primal for under $10 a pound...
    I will wait for this to finish. I'm shooting for the weekend of March 16th, so 30 days on this smaller loin.
    I will keep my fingers crossed.
    I have the photo of the package for weight but I forgot to take an actual measurement to compare to the final weight. My bad...

    Ron, what is the moisture content of the air in the fridge?  It is much lower than the meat, is it not?  That concentration gradient will cause the flow of moisture in one and only one direction.

    About 21 days in and pulled out to check.
    Looks like good moisture loss and color but starting to get small white spots.
