Roccbox pizza last night. finally got dough to cooperate

70% hydration, 9% culture stater, 3% salt and .002% yeastColbyLang said:

Mixed with wooden spoon for 1 minute, covered and let sit for 20 then mixed by hand for 5 mins, covered and let rise for 18 hrs. Made 15 dough balls, proofed for 90 mins then made em on roccbox
