2 tablespoons Dijon mustard
1 tablespoon lemon juice
6 cloves garlic, crushed (seems like a lot - put it calms down when cooked)
2 teaspoons salt
1 tablespoon freshly ground black pepper
2 pounds chicken wings[p]Remove tips of wings. Slice skin flap on inside of remaining wing joint. Mix all other ingredients and whisk to make marinade. Put wings in ziplock bag with marinade for at least two hours, up to overnight in refrigerator. Flip occasionally. [p]To cook: I cooked direct at dome temp of 325, turning every 15 minutes for one hour. Use whatever wood you like with poultry – I like apple. Also, I make double the marinade and use the second batch to baste at each flip. Watch you temp as these can burn![p]Bacon Beer Biscuits[p]This is a recipe that my wife found in some grilling magazine. I did it last night on the BGE and these biscuits were incredible!
3 slices bacon
1 small (1 ¾ cup) package biscuit mix (I used buisquick buttermilk)
½ cup beer
Pinch of cayenne pepper to taste[p]Setup BGE for indirect, I used platesetter with feet up and grid on platesetter. Bring BGE to 450 – 475 dome. Cook bacon in a cast iron skillet(I used a 10 inch skillet) directly on the grid with lid closed. Open to flip occasionally until crisp (about 15 -20 min). Remove bacon and drain on paper towel and crumble. Leave skillet with drippings in BGE.[p]Mix biscuit mix, beer, cayenne and crumbled bacon in bowl. Spoon mixture in biscuit size portions back into skillet (I got seven biscuits from this recipe). Cook for about 4-5 minutes and open BGE and flip (biscuits should have expanded and be golden brown on bottom). Cook another 4-5 minutes and enjoy. [p]These would be great with country ham!

Many eons ago, I lurked and very rarely posted on the old board as ‘Three-Legged Pig’. I didn’t realize that those posts migrated over here until I recently saw some very old resurrected threads.
I searched and found the above post I made in 2005. It was one of the first of very few posts I made over there.
Obviously, it didn’t garnish much interest with only 11 views and 1 response.
I am bumping this because I want to re-share the two recipes. I still recommend both.
I still make Garlic Dijon Wings, but I use about half the salt from the original.
I forgot all about those biscuits, but I remember they were awesome. I need to try them again. (I know, it uses Bisquick which may offend some of the purists, but they really are tasty)

I bought a box of cracker barrel biscuit mix. It's a just add water set up. I'll give those a run before trying these.These do sound pretty freaking good.=======================================

Made these biscuits tonight. They were tasty. I did alter the recipe and added some grated smoked cheddar.
