Bunch of tri tip carried locally here now, not so much a few years ago. Sam’s here likes to cut them into steaks......... my guess is they move them that way since a lot folks may not know how to cook them otherwise.

Beautiful! For years I found that tenderness varies from one tri-tip to another, and sometimes they're chewy. So I always sous vide them before searing just to make sure. It's my favorite roast.Judy in San Diego

My plan was to SV one and roast the other but we got pressed for time.
