I’m just learning the baguette thing. I found that leaving them cool down in the oven with the door cracked helps the crust. You need to have steam when their baking. I put a cast iron pan on the lower rack and put ice cubes in when I launch the baguettesIn the bush just East of Cambridge,Ontario
