one bird with the garlic and one with the medium. Spatched them, removed the keel bone and the rib bones. Top bird started to get some color so I flipped them over. I willl let me ride a bit then flip and rotate the birds (top bird to bottom, bottom to top)

Looks good! The medium is my favorite hot sauce by far. Try Raichlen’s piri piri chicken wing recipe if you haven’t yet. It’s one of my favorite wing recipes.

No. I did remove the keel bone and the rib bones which helps the birds lay even flatter though. Cooked 350-400 temp and flipped and rotated top to bottom etc.. -
