Today's brisket

This one was 11.6lbs Prime full packer from Costco. I let it sit in the fridge almost a month past the pack date. Pack date was 11/27. Sell by was 12/4. I opened it up, trimmed it, and rubbed it the night of 12/20 and started the cook this morning.

Just before going into the foil (5:20 into the cook):
After just an hour in the foil, the flat had gone from 164F to 199F. It's been FTC'd now for 2.5 hours. I just took it out for a temp check...still 165F in the flat, so I guess I can hold it a bit longer.

You can't lose with Costco (or Sam's). AFAIK, both will give you a full refund of your membership fee at any time if you tell them you're not happy and want to cancel. With Costco's credit card, (was AMEX, now Citi), you'll likely make enough in cash back on your purchases to cover the store membership fee.

You can (and should) wet age brisket in my opinion. I also keep them (Waygu) in the freezer for 1-2 years without much degradation. I wet age my briskets 4-6 weeks typically.The Cen-Tex Smoker said:

I'd be afraid to go months...but a few weeks in the cryo is no problem. When I looked at this one last night before cutting it open, the cryo bag was starting to look just a little "loose on the meat", which makes me think either the bag is failing or the wet aging process is producing gas...not sure which, if either is the case, but it made me think last night, time was running out to either cook or freeze it. You can see in the first pic the "air pockets" that I don't think were there when I bought it.

@njl good call if there was any doubt about the cryo being compromised. I am cooking a 3 week wet aged Costco prime packer Sunday and no pack/wrap issues to date.@bgebrent - There are only three calendar dates where I have the vision for that duration wet age hold:May 28th- National Brisket DayJune TBD- Father's Dayand the Saturday after Thanksgiving.Those are brisket givens. After that it just depends-like this Sunday. FWIW-Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
