My Sunday School class is fixing a lunch for workers helping with a Habitat for Humanity build tomorrow. Gonna do a batch of brisket chili to take along with hot dogs and chips. Did a twelve lb packer overnight and have several lbs of brisket vac packed in freezer. Looking at as max headcount of forty. Just wondering if i need to smoke another brisket tonight.

You should plan for 8 ounces (by volume) per person. Not sure how that equates to brisket(s). That’s about 16 portions per gallon. So you will need about 3 gallons of chili for 40 people. You can impact volume downward if you have other items. Also, you can use a smaller bowl but seconds can be had. Not sure if this is helpful information or not. Good luck with your Habitat project. If it's Texas Chili (Meat, Peppers, Onions) you might need some more meat. If you add beans you're probably OK where you are.Michiana, South of the border.

This is what we do for Scout/Webelo days and it’s usually pretty close to thisnorthGAcock said:You should plan for 8 ounces (by volume) per person. Not sure how that equates to brisket(s). Thanks for everybody's feedback. Think will shoot for 4 gallons and will do a mix of cubed brisket and ground chuck. I like that blend of different textures.
