I’ve been trying all sorts of methods rubs and sauces for 4 years now. Turns out the my favorite wing is the wing I tasted at an Eggfest that got me to pull the trigger on an egg in the first place. Just made these yesterday and added the secret sauce which together blew this over the top for me and everyone that tried them.
Half pack of Costco party pack wings.
marinate for 1 hour or 2:
1/2 cup mad hungry Hot whang rub
1/2 cup sunflower oil
1/2 cup red hot wing sauce
1 Tbs grandulated onion
1 Tbs garlic salt
Method: Vortex. I found this method to give the crispiest skin and provide enough smoke flavor.
Cherry wood
400 degrees turning after 30. Then pull at 45 or to disired color.
Sauce: Thunderbird Whitebird Sauce.
Found this combo of the spiciness from the marinade and the mayonnaise based sauce one of the best I’ve tasted in a long time.

Excellent post. I’ve never tried this method. I love wings and will be trying something similar (I don’t have the setup you have, so I’ll improvise)Memphis, TN

No joke...everytime I bring these into work people say they are the best wings they’ve ever ate. Definitely give them try. Like I said one taste of these during a demo and I bought the egg haha

Those look good. Any idea what's in the rub? Wonder if there is any baking powder?
From my experience, the crispiest wings I've done is by following this Food Lab guide: https://www.seriouseats.com/recipes/2010/02/the-best-buffalo-wings-oven-fried-wings-recipe.html. Obviously adjust for using the egg instead of the oven.
The baking powder, salt, and drying in the fridge are the key for the crispy skin. Then use whatever sauce you want at the end of the cook. -
