Just spatchcock’d a 20lb organic (don’t ask... wifey’s request) bird to dry out in the fridge over night. The plan is Mickey’s Coffee Rub and raised direct with some smoke. Stay tuned.

Pro-tip... Getting some roasted red peppers started for apps tomorrow served with mozz and prosciutto... which also gives me the chance for a semi-clean burn when I’m done before tomorrow.
