Cold Smoke Question
Battleborn
Posts: 3,699
I have never cold smoked anything. Last weekend I picked up some cheese, an Amaz-n type smoking tube and some make pellets.
My question is, what is the warmest ambient you will attempt to cold smoke?
It has gotten down to 45 at night, which is sub- arctic by Las Vegas standards. Is that cool enough ti have decent results?

If I'm doing cheese, I try and do it when the ambient stays below 70.
You can push it a bit by using a tray of ice as your heat deflector. Side benefit - refreeze the ice into ice cubes - takes a bloody mary to next level.
Some smoked salt is also nice to have on hand.

I'm not that good to push close to 100 but I have cold smoked cheese when the temp was in the mid 70's. Just have to make sure the sun isn't shining on the grill when the ambient is at those temps as I once found out.lkapigian said:Anything under 100 f you are good
