If you want to get a good estimate-take a piece of string and run it around the bird. Subtract around an inch+ for the loss of back bone and that's close enough to the spatched width you would work with. FWIW-

When I had a medium, I did a 10 or 12 lb turkey without spatchcocking. It was a tight fit. You might have to tuck the legs.

A 14# will fit not spatched.
